Vegetable foods

Vegetables can be eaten either raw or cooked and play an important role in human nutrition, being mostly low in fat and carbohydrates, but high in vitamins, minerals and dietary fiber. Many nutritionists encourage people to consume plenty of fruit and vegetables, five or more portions a day often being recommended.

The tomato is consumed in diverse ways, raw or cooked, in many dishes, sauces, salads, and drinks. While tomatoes are fruitsbotanically classified as berries,they are commonly used as a vegetableingredient or side dish.
Eggplant is nutritionally low in macronutrientand micronutrient content, but the capability of the fruit to absorb oils and flavors into its flesh through cooking expands its use in the culinary arts.
Carrots are long, thin, orange-coloured vegetables. They grow under the ground, and have green shoots above the ground.
